6 weeks... feels like 6 months

HI!

I swear, I was just thinking the last few days, by the time I get to post in my blog, I'll have to say, "was it really last year!"

Thank God I got the motivation and time to squeeze in a blog session today.
Between the boys starting school and the longer than normal days with drop offs and picking up and homework, and dinner... baking when I have cakes due, sporting events, crazy weekend schedules and dealing with insomnia now, I have ignored my lil blog.

But its never forgotten!

Still trying to smooth out our weekdays with school. the youngest two have thee hardest time adjusting and some nights sleep from the moment they are home! I on the other hand, cant seem to stay asleep at night. sometimes up at 330, 430... mostly 530 but wide awake like i never slept. crazy.

But I am looking forward to our family trip in 2 weeks! Chi-town!!! its been a year and I cant wait to return, this time, my boys will be with us and its going to be sooo exciting to have them come along!

Here where I live, we also had a week of late summer weather! It was over 100 and we went from preparing for boots and scarves and Pumpkin Spice Lattes to shorts and flip flops and shades! Talk about mental confusion!
But now, again, its cooling off, grey skies, chilly winds and I'm ready for it to stay. I baked up a storm this past weekend after my most recent cake order cancelled. Pumpkin spice cupcakes with cream cheese swirl baked in. Pumpkin spice cupcakes in the shapes of leaves and pumpkins and regular ones with cream cheese frosting, pumpkin spice oatmeal cookies and red velvet cookies! Sugar high? nah, just my love of baking and the fall season!

Everyone loves me this time of year lol, I get requests for Pecan Tassies, Almond Crescents, Rum balls, Pumpkin Spice Oat cookies, Candied yams, sweet potato souffle... and the list goes on.

So glad I get to catch up on every ones blog and post one of my own! hopefully i get another one in this month! maybe after my trip!

Dream a little dream...

Nothing happens unless first we dream. - Carl Sandburg

I sit here watching in awe, DC Cupcakes on TLC and I can practically feel the joy and passion radiation through the TV and through me! How I wish that was me, in my own cute little bake shop, with my original cake recipes and my own designer boxes. *sigh*

Sometimes, I feel like all my ambition, passion, desire will only go as far as my dream. I sometimes wonder, what is it that they have, that I don't? What was the break they got, the "A-HA" moment that gave them the realization of "THAT is how I will make it happen". I wonder... When will it hit me?

I have come to a recent fascination with cupcakes, as I also want to expand my business to have an entire cupcake line. I want to buy a mobile food truck and sell fresh baked cupcakes out of it. I want a cute little shop on a corner with big windows and a second floor for my office and mini studio for nights I am pulling all nighters from big orders. I want a kitchen to cook in with 10 ovens where one side opens to the test kitchen and the other to the decorating kitchen.

I dream big. Yes. I want grand things. I want the best cakes, cupcakes, sculpted cakes. I want lines around the block, I want to be featured in Martha Stewart, Food and Wine, Saveur, Gourmet Magazine, and especially Bon Appetit :)

But even if I don't have the notoriety, the food network status, or the second floor office mini studio... I just want to do what I love with my own business. I want to bake, decorate, create.

Will my time come? Will my dream come true?

work it on out!

Today, I almost ran a mile straight. I know, not a big feat for most but for me... I have not ran in a VERY lonng time. I took a 2 min break due to a cramp just below my rib... then ran the rest of the way back to work totaling 1.11 miles. So now im feelin =D supa cheeezy! lol

Ill get some weight training and balance ball in tonight too. Before I bake. I have been trying to bake these Salted Carmel Cupcakes (and while I'm at it, Ima make some Peanut Butter Cup Cupcakes too!!) so I can continue to taste some new creations to be added to my new slightly secret but not for long expansion to Slice of Delight.

Happy Hump Day!

Always felt awkward sayin hump day! lol I don't know why... maybe because the little kid in me **giggles** when i think of "humping"!!!

Must admit.. Baking every single night since Sunday
with a full time job already
is exhausting.
These are the times when I wish
Baking WAS my job.

*sigh*
oh well, soon.
keep tellin myself that.

But I did realize last night
into my 3rd hour of
Mixing, pouring, icing, decorating...
that I wouldn't want to be doing anything else in my spare time
other than having some mommy time.
:)

So I ended the fundraiser successfully!
didn't sell any today because someone ordered
3 dozen!

Today i feel like it should be Thursday.
Is this week draggin or WHAT!
At least work is steady and slow.
My mental has calmed down and
the sun came out today!

So a Happy Hump Day to all!
Here are the pics I promised!

Mies en place

The literal translation is; everything in order. First rule for any chef or pastry chef. Having everything in order, veggies chopped, liquids and solids measured or accessable, whatever can be pre made or done before the actual preparation should be done.

This i am practicing myself and am teaching my son. He, like i, loves to cook. Sometimes though for myself, I get the urge to bake or cook out the blue and I definately do not prep anything!

I more or less, grab and go. lol

I'm writing this via my phone and its not very cooperative. :)
But my blogging addiction cares less. lol.
